Process:Eggway’s Pasteurized Frozen Hen Egg Yolk with 11% salt is derived from 100% fresh hen shell eggs. The yolk is separated, pasteurized, and blended with salt to ensure microbial safety, enhance preservation, and improve functional performance. This product is designed for various industrial food applications requiring extended shelf life and flavor retention.

To restore frozen hen yolk for use, thaw it slowly under refrigeration and mix with 0.4% salt or 10% sugar to maintain texture and prevent gelling.
